Once crab is caught (dead), it will deteriorate rapidly.In particular, blue crabs deteriorate faster than other crabs.That's why we are extremely particular about serving live fish.We generally purchase our ingredients at the riverbank on the day of your reservation.

This year, I rode Uchiko again!

This is a female migratory crab that the owner purchased at the fish market! It's guaranteed to be delicious.

What's more, it's delicious even if you eat it as is, without dipping it in the sauce!

When the female does not have any eggs inside, the male is tastier than the female.

They have several times more glycine, a sweet amino acid, and betaine, a savory component, than females.

The females start storing eggs (uterine roe) from around November, which become delicious.

In 2015, Uchiko was slow to arrive, starting in late November.

The female Hanuri blue crabs we serve are extremely lively and have not yet laid any eggs until this time of year.

Even though Ganjang Gejang is a famous restaurant in Korea,

Most stores use frozen ones.It's the same in Japan.

If you make a reservation at Hanuri, the owner will head directly to the shore early in the morning on the day you wish to catch fish!

We stock healthy crabs.

How does it taste? I'm sorry but it's better than the real thing.

Crabs deteriorate very quickly after being caught.

That's why at Hanuri we are extremely particular about keeping the fish fresh.

In Hanuri, the live fish is made by removing the shell and marinating it in soy sauce.

It's a lively crab that has been moving around for a while.

It's moving a lot.First of all, it would be impossible to imitate it.

At Hanuri, crabs that only twitch a little are not considered live.

Even at the fish market, when the fish are stinging, prices fall to one-third of their original size.
